The first cook of Bivouac Ciderworks is aiming to open a solo grill this May that will feature Filipino cuisine in reinterpretations of classical dishes and resourceful plates that mix normal flavors with French and excellent dining techniques. Called Maya, a bistro will offer breakfast, lunch, and dinner.
